No Cream Chocolate Truffles

Does anyone remember a TV program that was on in the mid 00’s called Cook Yourself Thin? It created healthier versions of favourite dishes for people who were trying to loose weight. I really enjoyed it, and this recipe is from it.

It’s not ‘healthy’ as such, but it doesn’t include any cream or sugars, it’s just chocolate, honey and what ever flavour and coating you want. I only ever use this recipe when making truffles, not because it’s lower fat than traditional truffles, but because of how quick and easy it is and how few ingredients it takes.

The recipe I’m giving you here is for dark chocolate orange truffles. But white chocolate and coconut ones work well too, with Malibu instead of the orange juice and desiccated coconut instead of the cocoa powder. Or you could try rum or espresso.

They keep really well in an airtight container in the freezer. I don’t even wait for them to warm up, I just shove them straight in my mouth. But if you can resist, they make lovely gifts and always go down well at parties.

Ready in 50 mins (10 mins prep, 30 mins chill, 10 mins make) – makes 15-24 depending on size.


  • 200g good quality dark chocolate (70% cocoa or more if you can)
  • 6 tablespoons of fresh orange juice
  • 2 tablespoons of clear honey such as Acacia
  • Cocoa powder to dust


  • Break up the chocolate into pieces and melt, either in the microwave or over a bain-marie (if microwaving check and stir it every 30 seconds, you don’t want it to burn) – Pic 1
  • Once the chocolate is melted, add the orange juice. Mix well, but gently. the texture will start to seize up and thicken. – Pic 2
  • Add the honey. Mix well, but gently. The mixture will turn glossy. – Pic 3
  • Chill for about 30 mins in the fridge until the mixture is almost solid. – Pic 4
  • Take a spoonful of truffle mixture and form it into a ball in you hands and drop it into the cocoa powder. – Pic 5
  • Coat well, then roll on a piece of kitchen roll to take the excess powder off and smooth the surface. – Pic 6
